About Kashmiri-type

Kashmiri-type chilli powder is defined by what it does in the pan: a vivid red colour with only a whisper of heat. True Kashmir-grown chilli is scarce and comparatively low in colour, so the international trade's Kashmiri powder is made from Byadgi Dabbi and similar low-pungency, high-colour pods. We say so plainly, and produce ours from selected Dabbi and mild Guntur pods so that the colour is natural and consistent, with no added dyes. Every lot is tested for Sudan dyes and other colourants and shipped with the report.
